Tamarind and Dates Chutney


Tamarind and Dates Chutney, tamarind dip, dates dip
Tamarind and Dates Chutney is a tangy sauce used for Chats. It is sweet, spicy, tangy, sour everything mixed in one particular sauce. This is the sauce, which will last for many days too in the refrigerator. It can also be used as dip.



Ingredients:

1. Tamarind - 1/2 cup

2. Dates - 1/2 cup
3. Sugar - 3/4 cup
4. Jaggery - 1/2 cup

5. Roasted Cumin (Zeera) powder - 1 tsp

6. Chilly powder -1/2 tsp
7. Garam Masala - 1/4 tsp
8. Salt - salt should be put for half the quantity (adjust it as per the taste)
9. Fennel seeds (saunf) - 1/2 tsp
10. Raisins - 1/4 cup
11. Fresh grapes - 1/2 cup

Cooking Method:

1. Soak tamarind and dates in warm water for sometime or until it gets pulpy and extract the water from it (tamarind pulp can also be used).


2. Once the pulp is extracted cook in a pot with some water with all the ingredients and allow it to boil.


3. Once the pulp gets little thicker (the chutney gets thick once it cools down) take it aside and allow it to cool and store it in a fridge. 


* The Tamarind Chutney can also be made only with tamarind or only with dates, or combine both as above details.
* Onced cooked the Tamarind Chutney can be strained to get fine consistency but you will loose on fibre content in tamarind. Choice is yours.
